Ingredients

For the Fish

  • 500g white fish fillets (such as tilapia, cod, or snapper), cut into bite-sized pieces
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • Vegetable oil for frying

For the Sweet and Sour Sauce

  • 1/2 cup ketchup
  • 1/4 cup rice vinegar
  • 1/4 cup brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 carrot, thinly sliced
  • 1 cup pineapple chunks (fresh or canned)

Instructions

1. Season the fish fillets with salt and pepper.

2. Prepare three shallow bowls. Place the flour in one bowl, the beaten eggs in another, and the breadcrumbs in the third.

3. Dredge each fish fillet in the flour, shaking off any excess. Then dip it into the beaten eggs, allowing any excess to drip off. Finally, coat the fillet with breadcrumbs, pressing gently to adhere. Repeat with the remaining fillets.

4. Heat vegetable oil in a frying pan over medium heat. Fry the breaded fish fillets in batches until golden brown and crispy on both sides. Transfer to a paper towel-lined plate to drain excess oil.

5. In a separate saucepan, prepare the sweet and sour sauce. Combine the ketchup, rice vinegar, brown sugar, and soy sauce. In a small bowl, dissolve the cornstarch in water to make a slurry. Add the cornstarch slurry to the saucepan and stir until well combined.

7. Add the diced bell pepper, onion, carrot, and pineapple chunks to the sauce. Cook for 5-7 minutes until the vegetables are tender and the sauce is thickened.

8. Once the sauce is ready, add the fried fish fillets to the pan. Gently toss to coat the fish in the sweet and sour sauce.

9. Serve the sweet and sour fish hot, garnished with chopped green onions or sesame seeds if desired. Enjoy with steamed rice or noodles.
